Teacher Week Blog Hop ~ Low Carb Make Ahead Lunches




It's Tuesday! And that means it's time for another link up with Blog Hoppin! 

If you follow me on Instagram, you know that I have been on a low carb diet for about a month now. I have lost 7 of the 15 pounds that I need to lose... my goal is to get there before my 41st birthday in October! 

I'm certain that pre-packing lunches on Sunday evenings has helped me to stay in control of my diet. Here are some things that I pre-pack. 

These two tubs are are kept in the fridge, one is meats and cheeses, one is veggies.

Meats and Cheese tub: Tuna Salad (tuna and mayo only), Egg Salad (egg, mayo, salt, pepper, paprika) Chicken Salad (pre-made from grocery store), deli cold-cuts, cheese squares, and laughing cow cheeses. I share this with my daughter, it's not all me... haha! 


Veggie Tub: Cut up peppers (bought pre-cut at Walmart), celery stalks (pre-cut and packaged), small baggies of cherry tomatoes, quartered cucumbers (salted), and some lettuce leaves for wrapping deli slices and cheese. 




I also pre-cup ranch dressing and chunky avocodo. The natural chunky avocado in Walmart's produce section is carb-free... but it browns really quickly.  


Here is the egg salad and cheese square that I took for lunch Friday. Still fresh, no funky smell, no gas either... haha! 


Some of my snacking ideas: The Nutrition Health mix by Planters is only 2 net carbs per serving! 


My life saver! As a chocolate addict, I must have exactly 2 of these every single day! If they are fresh enough, they are delish! 


Here is one of my quick breakfast ideas inspired by Low Carb Traveler, she has lots of tips for quick and easy low carb eating. This is cottage cheese, pecans, sugar free jam, a dash of cinnamon, and a sprinkle of organic stevia. 


And here is my Saturday morning breakfast, when I have time to cook. 2 fried eggs, cheese, chunky avocado, and a turkey sausage link. Much yummier than it looks!
